It has been an awfully long time since I baked something and it was my daughter who reminded me that it was high time her mom comes out of the hibernation.
Well, its not that I have suddenly grown tired of baking or neither has my oven broke down....... its just I had run short of time for the last 2 months with my little one fluttering all around the place, morn to night, celebrating her vacation!!!!
Ofcourse, its a joy to have her before my eyes all day long, only that the days seem to grow shorter and shorter.
Anyways, my girl started her kindergarten this september , gosh, can't believe she has moved into proper school already !!
So, obviously my days have grown longer and I do have some extra time for some extra cooking and blogging, its just that my nights have started shrinking :(
I really dont know, if my daughter could understand my problems, but , she never ever troubled me with any of her demands all through her vacation and I should say she did give me some cooling time after that too, until a couple of days back...... she confronted me with an ‘enough is enough’ look on her face and asked ‘amma, do you know to bake cakes’.... ahem!! well, I got the message crystal clear :/
So,I pulled together my lazy bones and baked this chocolate pound cake, from Joy of baking,which I had been eyeing for some time now.
This pound cake is wonderfully moist and buttery and has the just right chocolate flavour and makes a great bite with a cup of coffee.
CHOCOLATE POUND CAKE

Unsweetened Cocoa powder - ¼ cup
Boiling hot water - ¼ cup
All purpose flour - 1 ⅓ cups
Corn Flour/starch - 3 tbsp
Baking powder -1 tsp
Salt - ¼ tsp
Unsalted Butter - 1 cup at room temp/ softened
Sugar - 1 cup
Eggs - 3 large at room temp
Vanilla extract - 1 ½ tsp
Preheat oven to 177 degree C . Grease your loaf pan and line the bottom with parchment paper. Well, I used a silicone loaf pan, so didn't have to go through this step.
In a bowl, mix cocoa powder with the hot water till it is smooth and lump free. Set aside to cool completely.
In another bowl, sift together flour, corn flour, salt and baking powder.
Using your hand mixer or stand mixer whisk butter till smooth and creamy. Add sugar to this and continue beating till the mixture is fluffy and light( about 2-3 mins). Drop in the eggs one by one, beating after each addition.
Now add the vanilla extract and the cocoa mixture and beat till incorporated.
Tip in the flour mixture and using a rubber spatula, fold it into the butter mixture until just combined. Do not over mix.
Pour the batter into the prepared pan and bake for 50-55 mins or till a toothpick inserted into the centre of the cake comes out clean.
Cool completely before slicing.
