A Double Chocolate Treat

Recipe: Chocolate Cupcakes with Chocolate Ganache

I continue to be on a baking spree and its cupcakes again J
I like making cupcakes because they take very little time to bake and are easy to stash away too.
And this time I have decided to bake our all time favourite… chocolate cupcakes!! 
I am not sure from where I got the recipe for this one, but I have been making them for quite some time now and it gives wonderfully soft and moist cakes.

My little girl is quite crazy about them and I love making these cupcakes just to see her enjoy eating it, smudging it all across her face and stretching out her tiny chocolate covered hands for more.
I usually keep my cupcakes plain but this time I wanted to add some frills…. So I frosted them with some really chocolaty Ganache, the recipe of which comes from ‘Joy of baking’.
It’s an easy to make recipe and involves no complicated steps, in fact, it doesn’t even require a mixer!!!


Chocolate Cupcake


Flour – 1 ¾ cups
Sugar – 2 cups
Cocoa – ¾ cups
Baking powder – 1 tsp
Baking soda – 1 tsp
Salt – ½ tsp
Eggs – 2 large lightly beaten
Buttermilk – 1 cup
Vegetable oil – ½ cup
Vanilla essence – 2 tsp


Preheat oven to 180 degree C and place the oven rack in the centre.

Blend all the dry ingredients (i.e. flour, sugar, cocoa, baking soda, baking powder and salt) together in a mixing bowl.

Whisk together all the wet ingredients (eggs, buttermilk, oil and vanilla essence) in another bowl.

Add the flour mixture little by little into the egg mixture and fold it in using a wooden or rubber spatula until well incorporated. Do not over mix the batter as the cake will loose its soft, moist texture.

Line the muffin tin with the cupcake cases. Fill ¾ of the cases with the batter, pop it into the preheated oven and bake for 10-15 mins or until a toothpick inserted in the centre of the muffin comes out clean.

Leave to cool completely before frosting.

Chocolate Ganache


Cooking chocolate – 230 gms
Whipping cream – ¾ cups (180 ml)
Unsalted butter – 1 tbsp
Sugar – 2 tbsp (optional, if you need your frosting to be sweeter)


Chop the chocolate to small pieces and set aside.

In a heavy bottomed saucepan heat the whipping cream and butter and bring to just boil. You may add your sugar into this mixture at this stage and mix well.

Pour the hot mixture immediately onto the chopped chocolate pieces and let it stand for 5 mins.
Now mix the chocolate and the cream mixture well until well combined.
Allow to cool completely and whisk the mixture until fluffy.
The Ganache is ready for use.

 You may now frost your cupcakes and enjoy it as nice evening bite or it can make a great dessert too.
