Recipe: Lemon-Mint Cooler
Summer is here and it seems to have crashed in with all its vigor and fury :(
Of course, Middle East is known for its scorching, dry summers but this year the heat has already soared up to 45 degree C and plus...........don't even want to imagine what July and August are going to be like!!
Last year this time, the weather had been quite pleasant and I remember we used to have some lovely evening strolls in our compound and the kids used to enjoy long hours of outdoor games. But this year, the very thought of stepping out into my patio seems unimaginable.
All you have to do is put one foot out of the door and you will wilt like a flower. Its like the sun is out there seeking vengeance for all the cruelty that we earthlings have inflicted on our mother nature :(
The only obvious way to survive this terrorising sun is to keep ourselves well hydrated and that means drinking lots of water. But sometimes water alone may not just do the trick and that is when these lovely cool drinks come in handy. Though juices as such are quite refreshing , lemon does have an exceptional zest in it to lift our weary souls......... what more say, if it is coupled with a dash of mint....... !!!
Lemon/lime - 2 nos
Mint Leaves - a bunch chopped finely
Brown sugar - 2 tbsp
Sugar - 1 tbsp or as per needed
Water - 2 glasses
Make 2 glasses of lemonade with one lemon
Cut the other lemon into wedges.
Place the lemon wedges,chopped mint leaves and brown sugar in a deep bottomed vessel and using a glass mash them together so as to release the juices from lemon and mint and also from the lemon zest. This can also be done with a mortar and pestle.
Now pour this lemonade into the mashed stuff, add required amount of sugar and mix well.
