For a Perfect Tea Break...

Recipe: Paripu Vada (Spicy Lentil Fritters)

Finally with November coming to an end, the much awaited winter seems to have finally settled in :)
With the last couple of days being slightly cloudy and cool my anticipations has soared and finally yesterday morning it rained.... And man what a rain, actually not just rain, there was even a short shower of hailstones. My very first experience with hail !!
I couldn't help jumping around like a kid at 4 in the morning ......  And it continued raining all through the morning too, yippe yippe!!

By afternoon, all I could think about were some sizzling hot snack to go along with my evening tea, you see, by 2pm it was already looking like 5 pm and for me evening means tea break :).  Mentally flipping through my list of favourite snacks, my mind kind of got stuck on these paripu Vadas.

All the way from Punjab...

Recipe: Gobi Paratha (Indian bread with spicy Cauliflower filling)

I have always had a soft corner for Punjabi cuisine. Love everything about them, their flavour, richness  and of course, their easy ingredients.

My favourite amongst their cuisine, are their  stuffed rotis and parathas.....and of that, the ones I adore are Aloo Parathas, Gobi Parathas, Methi and Palak Parathas.... Hmmm love them anytime.

When Chocolate met Orange!!!!

Recipe: Chocolate Cake with Orange Butter cream Frosting

Here I am back again after a longer than expected break. Actually a lot happened over the past few weeks. Everything started with my daughters week long viral fever, followed by my 10 days long chest infection and asthma. And then when I started feeling that I could get back to my space, once and for all, we were bumpered with a string of birthday parties and other get-togethers and that left me with more timeless days.
Now, I am seriously worried whether I would be forgotten in the blog world :(

Chocolate Reloaded!!

Recipe: Chocolate Chiffon Cake with Chocolate whipped cream filling and Milk Chocolate Ganache Frosting

It's already mid October and winter is no where in the vicinity.....  Ever since the beginning of this month , I have been waking up every morning expecting to find some rain or fog, but for some unfair reason, I am being betrayed :(
Last year, this time, we were already in our sweaters enjoying cool mornings and cold evenings.... But, alas, this year......

Recipe: Ari Murukku (A snack made from Rice powder)

There aren't many people who don't enjoy this popular Indian crunches, especially with a cup of piping hot tea or coffee.

Though not much of a crunch lover myself, I do love Ari Murukku especially the ones my amma makes. They are so crisp and tender that its absolutely impossible to stop with just one.
I had always wanted to make some of these at home, but had been postponing it for a long time now, until my eyes fell on these lovely pictures of murukku on the wonderful blog Tasty Appetite by Jay and then there was no turning back.

Sinful Cinnamon!!

Recipe: Cinnamon Rolls

Seasons seem to be changing colours too fast these days. Feels like it was just yesterday that I had packed up our winter wears for the approaching summer. And when the summer arrived, I felt that the scorching heat would never end. This year we had a terrible summer around here, but inspite of that, I had somehow failed to notice the fall in temperature through the day and the breezy, pleasant evenings that had set in by the beginning  of this month.
It was not until the other day, while taking a stroll by my once lush kitchen garden, I noticed that my almost dead chilly and bell pepper plants had started sprouting new leaves and even had some blossoms....... So, Autumn you are here again, a warm warm welcome !!!!

Autumn is my favourite season when I am in this part of the world. Here, in the Middle East, unlike the rest of the world, this is the best season to grow plants, any kind, flowering ones, vegetable plants, anything.
It was last year that I had started growing vegetables, and man was I proud of my tiny kitchen garden :) But,it almost broke my heart to see the fiery summer burn up my babies. I had expected all of my plants to be completely dry and dead, and it was sheer pleasure to learn that at least some of them had survived.

Some Green Goodness :)

Recipe: Methi Chapatti (Indian Bread with Fenugreek leaves)
Methi (feenugreek leaves) chapattis are a common type of bread in most North Indian households, but they are not quite familiar with many South Indians.
Though, I belong to the later category, these chapattis are common at my place. I love trying out different variations with chapattis and parathas and this one is one of my favourites, my other big favourite is the aloo paratha (bread stuffed with spiced potatoes).

Chocolatey Pound!!

Recipe: Chocolate Pound Cake

It has been an awfully long time since I baked something and it was my daughter who reminded me that it was high time her mom comes out of the hibernation.
Well, its not that I have suddenly grown tired of baking or neither has my oven broke down....... its just I had run short of time for the last 2 months with my little one fluttering all around the place, morn to night, celebrating her vacation!!!!

Rice Cake From the God’s Own Country

Recipe: Vattayappam (Fermented and Steamed Rice Cake)

This is another of my recipes which I had been holding back for a long long time now, well, accounting to some poor pictures that I had to click.
But you see the Vattayappams that come from this recipe mix is too good, that I felt its quite unfair to hold back such a treat.

Muffins and Cases

Recipe: Carrot Muffins
             Home-made Muffin Cases

I enjoy carrot muffins.... The flavour, texture and above all, the fact that it can stuff lots of carrot into my daughter, makes it all the more special :).
There are lot of recipes for carrot muffins floating in the blog world and I tried a couple of them too, but this particular recipe is something that I found to be quite a quick fix that too with a wonderfully moist and fluffy texture. I found it in joyofbaking like with most of my cake recipes :)

Little Round Bundles of Joy :)... And A Very Very Happy Onam

Recipe: Unni Appam (A Kerala Savoury)

Now, this little, soft, sweet, brown ball doesn't need any introduction to any Keralite across the globe.... I am sure !!

Always loved them, especially the ones that my Amma makes and also the ones we get at the temples as ‘prasadam’ .
These brown savoury balls, never fail to bring with them some fond memories.....they have always shared a major screen presence all through my childhood or maybe let me say, my pre-marriage days.
Amma used to make these so often that I hardly realised their greatness, until of course , I got married and moved out.

Traditional, Tasty and Healthy

Recipe: Vazha Koombu/Poovu Thoran (Banana Blossom stir fry)

Did you know that, there is no part of a banana tree that goes unused?? The fruits, of course, we all know, then there is the banana blossom, banana stem and roots.... I don't know how many are aware, but all of these are edible and tasty as well, and then yes, there are the leaves which we South Indians use, to eat from. Quite a tree , don't you agree!!

A Perfect Dessert

 Recipe: Peach-Bavarian Cream Charlotte

This post had been lingering in my draft for quite a few months now and I had been refraining from publishing it because of the poor pictures I had taken.
I had made this for a party and so had to rush with the photography before my guests arrived.
The pictures may not look so great but trust me, the charlotte did !!
Actually, everybody said that this was one of the best of my creations :)

Flavourful Coffee....

Recipe: Mocha Coffee Cake with Crumb Topping

This is going to be an awfully short post as I am in a little hurry... I am off for short break and won't be back for 2 weeks :)

But I wanted to get this posted at whatever cost as this is my 60th post and this had been in my draft for quite some time now....and I didnt want to break off with an odd number too ;)
See you all soon .......And rushing with the recipe

A Princess for My Little Princess

Recipe: Vanilla Cake with Buttercream Frosting

Every other moment or event that passes by, keeps leaving me awestruck at how fast the time flies these days. It just seems yesterday that we were getting ourselves ready for our little darlings first day at preschool and it's already time for her to bid farewell to her first teacher and friends.
She loves her school and so do we as it's a pleasure to see what a swell time she's been having out fact she enjoys her school to the extent of hating weekends!!!!

Anyways, her lovely roller coaster ride is coming to an end by the end of this month and we have been preparing her for that for quite some time now.... I hate giving her nasty surprises. Well, I guess she's learning to adjust to the fact quite faster than I expected. And I feel that its we adults who can be real spoilsports, because I think its me who is being a little over emotional about her leaving play school :).

Something Fishy in my Dish!!!!

Recipe: Fish Cutlets
Cutlets are a fav at my home, irrespective of whatever the filling may be.
But somehow fish cutlets have always been found to have a slightly higher fan following with almost everyone I know :)
My mom makes some of the best cutlets I have ever tasted and I follow her recipe word for word.

A Coconutty Treat!!

Recipe: Coconut Macaroons

I absolutely love coconut flavour and coconut flakes and anything with coconuts in them..... a typical Keralite trait I guess ;). So obviously, the moment I spotted this very very easy recipe on Ria’s Collection all I wanted was to get a platter of it right before me......and that was exactly what I did :).

A Meal in a Whiz, for one...

Recipe: Easy Chilly Paneer for one serving (Cottage Cheese-Green Pepper Stir Fry)

I simply detest eating alone. For almost 2 years after coming to Bahrain I had to go through the torture of lonely lunches ( I usually ate after feeding my little one and putting her to sleep and my husband always took packed lunch)
But the last 6 months had been different with my husband coming home for lunch as he had to drop our daughter back home after play school. :)

Some (Jack)- Fruitful Memories

Recipe: Chakka Ada (Steamed Jackfruit preserve-Rice dumplings)

This time of the year always comes with a lot of nostalgic childhood memories....the months of June, July and August. Well, these are the most awaited months for any child brought up in the middle east..... The time to break for the summer Holidays!!!!!! And that meant 2 long months of celebration in Kerala with all my cousins and relatives.

A Summer Soother

Summer is here and it seems to have crashed in with all its vigor and fury :(
Of course, Middle East is known for its scorching, dry summers but this year the heat has already soared up to 45 degree C and plus...........don't even want to imagine what July and August are going to be like!!

Sandwiches Grilled!

Recipe: Grilled Chicken and Sausage Panini

I am an ardent sandwich lover. Club anything between 2 bread slices and I am party.
And to have it grilled …...hmmm... heaven!!
Yesterday while channel surfing, I landed on this channel that was showing loads of loads of sandwiches, all shapes and sizes, and then all I could think of was digging my teeth into one of those :).

Glorious Oatmeal!!

Recipe: Lacy Oatmeal Cookies

This is one cookie recipe that I fell in love with, the moment I spotted it on Ria’s blog. The cookies she had made looked so beautiful and thin and wafer-like that all I wanted was to take a bite at it.
The next thing I know I was whipping up the cookie batter :)

A Birthday Treat!! (Photos Updated on 05/012016)

Recipe: Vanilla cake with Whipped Cream and Fresh fruit frosting

Today is my little brother’s Birthday.... well, don’t get carried away by the word ‘little’....he’s not all that little right now... :)  he’s 25 + year old man but will always remain my baby brother for ever!!
This cake that I have made today is to mark that celebration but unfortunately he is not near me to take a bite of it :(
Actually we live poles apart, he is in Canada and me here in the middle east. Nevertheless, I decided to go ahead and celebrate his birthday for him.

A Chocolate- Banana Delight

Recipe: Chocolate Banana Oats Muffin

With overripe bananas being a phenomenon in my pantry and with nothing better to do with them than mash and bake them into a cake or muffin, I was on my way to get that done when I suddenly remembered a great recipe I read in Ria’s Collections..... Banana-Buttermilk & oats Muffin.
The muffins she had made looked so good and inviting that I had made a note to do the same the next time I had  some overripe bananas over at my counter.
So here they were all ready to be attacked......
But I have a made a few changes with the recipe...... I gave it  a chocolate flavour to make it more appealing for my little one , well, she’s not much of a fan of the plain banana flavour.
Also I have reversed the whole wheat-flour proportions from the original recipe....... the final output turned out to be a real winner.

Well, my picky girl loved it......and that’s not all..... so did my banana flavour- hater husband (he didn't realise that he had been tricked into eating a banana muffin ;) ) and definitely me too.

It tastes best when eaten warm.

 All-purpose flour - ½ cup
Whole wheat flour - 1 cup
Brown Sugar - 1 cup (if using white sugar it’s ok to use ¾ cup)
Cocoa powder - ¼ cup
Oats - 1 cup
Baking powder - 2 tsp
Baking soda - 1 tsp
Salt - ½ tsp
Buttermilk - ¾ cup
Egg - 1 slightly beaten
Vegetable oil - ⅓ cup
Vanilla Essence - ½ tsp

Bananas - 3 medium sized mashed

Preheat oven to 180 degree C and line your muffin tin with liners.

Sieve together all the dry ingredients,i.e, the flours, sugar, cocoa powder, oats, baking soda, baking powder and salt in a bowl.
In another bowl whisk together all the wet ingredients as well.
Make a well in the dry ingredients and pour the wet ingredients in the centre of the well.
Using a rubber spatula gently fold in the ingredients together until just combined,i.e, until the wet ingredients are just moistened. Its ok to have some lumps.
DO NOT OVERMIX or your muffins will get quite tough.

Scoop out your batter using an ice cream scoop or spoon and fill the liners to ¾ level.
Pop into the oven and bake for 18-20 mins or till a toothpick inserted in the center comes out clean.
Leave to cool completely before serving.

Potatoes Pressured!!

Recipe: Kashmiri Dum Aloo (Potatoes cooked in tomato-yoghurt gravy)

Until last december I considered myself to be one of the luckiest woman on earth, well, maybe the luckiest amongst my friends and neighbours as I was the only one who could wake up at 8.30 am or even later almost everyday as my husband had to start work only by 10 am and my daughter hadn't started school yet......well, that was just the cake.....The icing was that I didn't have to prepare an elaborate lunch for the whole of the week....(except on the weekends of course) ...with my husband  almost alway taking packed lunches. And since I never enjoyed eating alone, my lunches were usually easy whip ups and sandwiches. The only real  lunch making that I had to do was for my daughter, but that was ok as it was mostly tiny quantities of fried rice, biryanis or chapatis.....which of course was a mere slice of cake!!

An Orange Spread and An Award

Recipe: Orange Marmalade

I guess jam making has caught on to me like a know ,it’s almost impossible to go back to bottled jams having enjoyed the luscious and fresh homemade varieties..... I know I have mentioned this in both my jam posts, but you see I just can’t help myself from saying this over and over!!!!!!

Apple Pied!!

Recipe: Mini Apple Pies ( Photos updated on 25 March 2017)

As I have mentioned earlier, most of my culinary trails are usually attempts to satisfy the demands set by my fussy little eater of a daughter and sometimes even an attempt to trick her into eating something which she might not eat otherwise.
These apple pies that I had to make are yet another product of her relentless pushing and bullying!!

It’s Festive Time Again!!

Recipe: Mango Pickle

It’s the Vishu time again.
One of my favourite times of the year, back in Kerala, with the whole land glowing golden with the beautifully yellow Kani konna flowers. It’s a splendour to see the kani konna trees in full bloom with their branches laden with bunches of these beautiful yellow flowers.

A Zesty Cake

Recipe: Eggless Lemon Cake

Engrossed in one of my favourite pastimes, blog surfing, I happened to see this mouth-watering picture of a lemon cake made by the popular and talented cook/blogger Ria. I found myself ogling at the lovely cake and then all I wanted was to take a big bite into that beautiful, yellow cake.

Ezzy pezzy Cookies

Recipe: Shortbread cookies

The past 10 days weren’t the pleasantest of the days for us with our little girl down with a mild attack of pneumonia. It broke my heart to see my ever so fluttery butterfly all curled up in our couch with soaring temperatures and a clogged little chest.

Healthy Baking Ventures

Recipe: Low-Fat Banana Bread (Whole wheat and Egg-less)

I love Banana Bread. I love everything about it, its lovely banana- cinnamon flavour, texture and the heavy aroma that hangs about the house even the day after the day of baking. Mmmm…. Heavenly!!
It is also one of the first stuffs that I had learned to bake perfectly. Actually the second one, the first being an obvious, chocolate cake J

Like most of my bake recipes, my banana bread recipe too comes from my virtual baking Guru, Stephanie Jaworski of Joy of baking. If there’s someone who hasn’t seen her mouth watering space, please do not delay.

For the Sweet Tooth

Recipe: Boondi Ladoo

Though I am not always a sweet lover, I do develop a tiny sweet tooth once in a while. And I mostly end up resorting to my evergreen favourite, Galaxy Chocolate, for comfort. Not that I don’t enjoy the other varieties of sweets like our Indian ones and their Arabic counterparts, just that most of the time they turn out to be too sweet and end up nauseating me.
Amongst the Indian sweets I have always enjoyed Ladoos, especially Boondi Ladoos, made the North Indian way.

Making More Jams

Recipe: Fig Jam

Remember what I told about homemade Jams in my first post on jams ?? If you don’t, let me remind you…. Try some homemade jam and you will never go back to the bottled ones…. Well, this post is a testimony of that.
I have decided to stick to homemade jams for good.

A Biriyani full of Surprise

Recipe: Iddiyappam Biriyani (Biriyani with steamed Rice- Noodles)

It’s been nearly 3 weeks in my new home now and I am finally getting in sync with my kitchen. Even as I say this, I am awed at how time flies!!
3 weeks already and I still feel like its just yesterday that we had moved in.
And talking about the racing time, I still gape at the facts that it’s been ages since I left college and that I have been married for 5 years now and I have a daughter whose 3 and a half years already and that my new born blog has just turned 5 months!!!!!!

A Dessert from my Homeland

Recipe: Easy Parippu Pradaman (Cooked Lentils in Jaggery-Coconut Milk Custard)

It feels like heaven to be back on the internet and in my space after what felt like eternity.
Well, I have just settled down after two long weeks of backbreaking shifting, shoving, sorting and stacking, yes, we have moved into a new place and I am only learning to get my hands used to the new cabinets in my new kitchen.
To worsen my plight the telephone people refused to turn up when expected delaying my connection to World Wide Web. It’s not until now that I realised how addicted I have come to be to the internet, especially to the blog world!!!
I had almost started to feel psychic, when the connection finally arrived J
Though I really enjoy my new house and surroundings, I kind of miss my old one too, especially since I had to leave behind a good set of friends and neighbours.  But unfortunately changes are inevitable and life has to move on….. Trying hard to learn that fact of life!!
Anyways coming to my dish, I had prepared this before my shift. Actually I made this for some of my good friends as a farewell treat J  and for obvious reasons could only get this posted now.

Another Frozen Delight

Recipe: Dulce de Leche Frozen Yogurt

I guess I have already mentioned before, how much me and my family enjoys a treat of some frozen yogurt once in a while. With the winter quite harsh this year I have been refraining from making this lovely dessert for quite some time now.

But a couple of days back, while surfing the net I happened to read some great recipes using Dulce de Leche (pronounced Doolsay de Lechay Well, for those who are not familiar with Dulce de Leche, it nothing but toffee.)
But what fascinated me most was the way in which Dulce de Leche was prepared and I just had to try it, which I did!!

Creamy Buttery Chicken

Recipe: Boneless Butter Chicken (Boneless Tandoori chicken in tomato and cream gravy)

Butter Chicken, with its Tandoor grilled chicken immersed in rich, creamy and spiced tomato gravy, I am sure requires no introduction with most Indians. And I don’t think I would be wrong in saying that it’s an absolute favourite with a majority of us too. Well, it’s definitely one of my favourites!!

I Make My First Jam

Recipe: Strawberry Jam

Breakfast is my favourite meal of the day. Though I usually enjoy typical south India breakfast meals, I do love a breakfast of bread, jam, butter and eggs once or twice a week and so does my whole family.  And so jam is an inevitable item in my fridge.

Going Egg-less!!

Recipe: Egg-less Banana Strawberry Muffins

It had been sometime since I had done some baking and decided to get my oven hot again. I was in no mood for my usual chocolate cake or banana bread and wanted to go for something that I hadn’t tried before.

Well, I could see some overripe bananas waving at me from my counter, but no, not banana bread, was in no mood for that one…. And yes I did find some strawberries stashed away in my fridge too.
